Great healthier alternative to egg scramble!

Ingredients
2 cloves garlic
1 block of extra firm tofu (~400g)
1 small onion & 2-3 roma tomatoes
1 tbsp soy sauce
Spices (1 tsp cumin, 1tbsp chili powder,
1/4 tsp turmeric, salt & pepper to taste)
1 cup baby spinach
2 tbsp nutritional yeast (optional)
Instructions
Drain water from tofu & crumble using your fingers into a bowl
Saute diced onion for 5-8 mins
Add garlic & cook for 30 secs
Add tofu & chopped tomatoes and saute for 10 mins
Add spinach, spices & soy sauce and saute until it's dry
Add nutritional yeast if cheesy flavor is desired
No-oil cooking method tip
Use 3 tbsp of vegetable broth
